Herb and Cheese Pull-Apart Rolls



For the Dough:

  • 3 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 cup warm milk (110°F/45°C)
  • 1/4 cup unsalted butter, melted
  • 1 large egg

For the Herb and Cheese Topping:

  • 1/4 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese


  1. Prepare the Dough:
    • In a large bowl, combine 1 cup of flour, sugar, salt, and yeast.
    • Add the warm milk, melted butter, and egg, and beat until smooth.
    • Gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms.
    • Turn the dough out onto a floured surface and knead for about 5 minutes, or until smooth and elastic.
    • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  2. Shape the Rolls:
    • Punch down the risen dough and turn it out onto a lightly floured surface.
    • Divide the dough into 12 equal pieces and shape each piece into a ball.
    • Place the dough balls close together on a baking sheet lined with parchment paper or a silicone baking mat.
  3. Prepare the Topping:
    • In a small bowl, combine the melted butter, minced garlic, and chopped parsley.
    • Brush the tops of the dough balls with the butter mixture.
    • Sprinkle the grated Parmesan and shredded mozzarella cheese evenly over the dough balls.
  4. Bake the Rolls:
    • Preheat the oven to 375°F (190°C).
    • Let the rolls rise for about 15 minutes while the oven preheats.
    • Bake the rolls in the preheated oven for 18-20 minutes, or until golden brown and the cheese is melted and bubbly.
  5. Serve:
    • Remove the rolls from the oven and let them cool slightly before serving.
    • Serve warm, allowing everyone to pull apart their own roll.
