Ham and Egg Breakfast Cups Recipe

 

Ingredients:

  • 12 slices of deli ham
  • 12 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • Salt and pepper to taste
  • Fresh parsley or chives, chopped (optional, for garnish)

Instructions:

1. Preheat the Oven:

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with non-stick cooking spray.

2. Prepare the Ham Cups:

  1. Line each muffin cup with a slice of ham, pressing it down gently to form a cup shape. The edges of the ham slices should stick up slightly above the edges of the muffin cups.

3. Add Cheese and Eggs:

  1. Sprinkle about a tablespoon of shredded cheese into the bottom of each ham cup.
  2. Crack an egg into each ham cup over the cheese. If desired, you can lightly beat the egg before pouring it into the ham cup for a more uniform texture.
  3. Season each egg with a pinch of salt and pepper.

4. Bake:

  1. Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
  2. If you prefer fully cooked yolks, bake for an additional 2-3 minutes.

5. Serve:

  1. Remove the muffin tin from the oven and let the ham and egg cups cool for a few minutes.
  2. Carefully remove each ham and egg cup from the muffin tin using a small spatula or spoon.
  3. Garnish with chopped fresh parsley or chives, if desired.

Tips:

  • For added flavor, you can sprinkle some chopped green onions, bell peppers, or cooked bacon bits over the cheese before adding the egg.
  • These ham and egg cups can be made ahead and stored in the refrigerator for up to 3 days. Reheat in the microwave for a quick and easy breakfast.
