Garlic Butter Steak Bites with Herb Mashed Potatoes

 

Ingredients:

For the Steak Bites:

  • 1.5 lbs (680 g) sirloin steak, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

For the Herb Mashed Potatoes:

  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk (adjust for desired consistency)
  • 1/4 cup unsalted butter
  • 1/4 cup sour cream
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions:

  1. Prepare the Mashed Potatoes:
    • Place the cubed potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.
    • Drain the potatoes and return them to the pot.
    • Add the butter, milk, and sour cream to the potatoes. Mash until smooth and creamy.
    • Stir in the chopped chives and parsley. Season with salt and pepper to taste. Keep warm.
  2. Cook the Steak Bites:
    • Season the steak bites with salt and black pepper.
    • Heat the olive oil in a large skillet over medium-high heat.
    • Add the steak bites to the skillet in a single layer. Cook for 2-3 minutes per side, or until they are nicely browned and cooked to your desired doneness.
    • Reduce the heat to medium and add the minced garlic and butter to the skillet. Cook for 1-2 minutes, stirring frequently, until the butter is melted and the garlic is fragrant.
    • Toss the steak bites in the garlic butter to coat them evenly. Remove from heat.
  3. Serve:
    • Plate the garlic butter steak bites and herb mashed potatoes.
    • Garnish with fresh parsley.
    • Serve immediately and enjoy!
