Easy Mini Cheesecakes


1 cup crushed graham crackers
4 tablespoons butter, melted
2 tablespoons sugar
2 packages cream cheese, softened
1/2 cup powdered sugar
2 large eggs
1 tablespoon vanilla essence
1/4 cup heavy cream


Preheat your oven to 325°F (163°C) and line a 12-inch muffin pan
Mix graham crackers, melted butter, and 2 Tbsp. Press the mixture firmly under each line.
In a large bowl, beat cream cheese and half the sugar until smooth. Add the eggs, one at a time, then the vanilla and cream and beat until combined.
Divide the mixture equally into each of the prepared containers, filling them 3/4 full.
Bake for 20-25 minutes or until the center is set. Let it cool to room temperature and refrigerate for at least 2 hours before serving.
