1. Prepare the Beef
Pat the beef dry and season with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Sear the beef for 2–3 minutes per side until nicely browned.
Transfer it to the crockpot.
2. Add the Vegetables
Add the onion, garlic, and sliced carrots around the beef.
Pour in the beef broth and Worcestershire sauce. Add the thyme, parsley, onion powder, and garlic powder.
3. Slow Cook
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is very tender and easily pulls apart with a fork.

4. Shred the Beef
Remove the beef from the crockpot and shred it using two forks.
Return the shredded beef to the cooking broth and stir gently.
5. Thicken the Broth
Mix the cornstarch and cold water until smooth. Stir the mixture into the crockpot.
Cover and cook for another 10–15 minutes until the broth begins to thicken into a light gravy.
6. Add the Noodles
Stir in the egg noodles and butter.
Cover and cook on HIGH for approximately 20–30 minutes, stirring once or twice, until the noodles are tender. Avoid overcooking so they don’t become too soft.
7. Serve
Taste and adjust the salt and pepper if needed. Spoon the tender beef, carrots, noodles, and savory gravy into bowls and serve warm.
Helpful Tips
Chuck roast works especially well because it becomes tender and flavorful during slow cooking.
If the noodles absorb too much broth, add a little extra warm beef broth before serving.
For firmer noodles, cook them separately on the stovetop and stir them into the crockpot just before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days. The noodles will continue absorbing the sauce, so add a splash of beef broth when reheating.
Tender shredded beef, soft egg noodles, carrots, and rich gravy make this Crockpot Beef and Noodles a simple, comforting dinner that’s perfect for busy days.
