“Crispy Golden Chicken Wings”

 

Ingredients:

  • 2 lbs chicken wings, tips removed, drumettes and flats separated
  • 1 tablespoon baking powder (NOT baking soda)
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • Oil for frying

Instructions:

  1. Preparation:
    • Pat the chicken wings dry with paper towels. This step is crucial for crispy skin.
    • In a large bowl, mix the baking powder, salt, garlic powder, paprika, and black pepper.
    • Add the chicken wings to the bowl and toss to evenly coat with the seasoning mix.
  2. Frying:
    • Fill a large pot or deep fryer with enough oil to cover the wings and heat to 375°F (190°C).
    • Add the wings to the oil in batches, being careful not to overcrowd the pot.
    • Fry for about 10-12 minutes or until the wings are golden brown and crispy.
    • Remove the wings from the oil and drain on paper towels.
  3. Serving:
    • Serve the wings hot with your choice of dipping sauces such as blue cheese dressing, ranch, or a spicy buffalo sauce.
