Cowboy Meatloaf and Potato Casserole Recipe

Ingredients:

  • 1 pound of ground beef
  • 1/2 cup of breadcrumbs
  • 1/4 cup of finely chopped onion
  • 1/4 cup of finely chopped green bell pepper
  • 1/4 cup of barbecue sauce
  • 1 egg, beaten
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper, to taste
  • 2 cups of mashed potatoes (homemade or store-bought)
  • 1 cup of shredded cheddar cheese
  • Optional toppings: chopped fresh parsley, extra barbecue sauce

Instructions:

  1. Preheat Your Oven: Begin by preheating your oven to 375°F (190°C). Grease a 9×13 inch baking dish or casserole dish with cooking spray or butter to prevent sticking.
  2. Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, finely chopped onion, finely chopped green bell pepper, barbecue sauce, beaten egg, garlic powder, onion powder, salt, and pepper. Use your hands or a spoon to thoroughly mix all the ingredients until well combined.
  3. Shape the Meatloaf: Transfer the meatloaf mixture into the prepared baking dish. Shape it into a loaf shape, making sure it fits comfortably within the dish and is evenly distributed.
  4. Layer with Mashed Potatoes: Spread the mashed potatoes evenly over the top of the meatloaf, covering it completely. You can use store-bought mashed potatoes or homemade mashed potatoes for this step.
  5. Sprinkle with Cheese: Sprinkle the shredded cheddar cheese evenly over the mashed potatoes, covering the entire surface of the casserole.
  6. Bake in the Oven: Place the casserole dish in the preheated oven and bake for 35-40 minutes, or until the meatloaf is cooked through and the cheese is melted and bubbly. You can check for doneness by inserting a meat thermometer into the center of the meatloaf – it should register at least 160°F (71°C).
  7. Serve: Once the casserole is done baking, remove it from the oven and let it cool for a few minutes. Sprinkle with chopped fresh parsley and drizzle with extra barbecue sauce if desired. Slice the casserole into portions and serve warm.
