Classic Quiche Recipe

 

 

Ingredients:

  • For the Crust:
    • 1 1/4 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1/2 cup cold unsalted butter, cut into small pieces
    • 3-4 tablespoons ice water
  • For the Filling:
    • 1 cup shredded Gruyère cheese
    • 1/2 cup shredded cheddar cheese
    • 4 large eggs
    • 1 1/2 cups heavy cream
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon ground nutmeg
    • 1/2 cup cooked bacon, chopped (optional)
    • 1/2 cup chopped chives or green onions

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, whisk together the flour and salt.
    • Add the cold butter pieces and use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together.
    • Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Pre-bake the Crust:
    • Preheat the oven to 375°F (190°C).
    • On a lightly floured surface, roll out the dough into a circle about 12 inches in diameter.
    • Transfer the dough to a 9-inch pie dish, trimming any excess dough and crimping the edges as desired.
    • Line the crust with parchment paper and fill with pie weights or dried beans.
    • Bake for 15 minutes, then remove the parchment paper and weights, and bake for an additional 5 minutes or until the crust is lightly golden. Let cool slightly.
  3. Prepare the Filling:
    • In a medium bowl, whisk together the eggs, heavy cream, salt, black pepper, and nutmeg.
    • Sprinkle the shredded Gruyère and cheddar cheese evenly over the bottom of the pre-baked crust.
    • Add the chopped bacon (if using) and chives or green onions.
    • Pour the egg mixture over the cheese and bacon, spreading it evenly.
  4. Bake the Quiche:
    • Bake the quiche in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
    • Allow the quiche to cool slightly before slicing and serving.
