Classic Creamy Chicken Salad

 

Ingredients:

  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon apple cider vinegar
  • 1 celery stalk, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup diced apple (optional for sweetness)
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions:

  1. Prepare the Chicken:
    • If not already cooked, poach or bake the chicken breast until fully cooked, then shred or dice into bite-sized pieces.
  2. Mix the Dressing:
    • In a large bowl, combine the mayonnaise, sour cream or Greek yogurt, Dijon mustard, lemon juice, and apple cider vinegar. Stir until smooth and well blended.
  3. Add the Vegetables and Apple:
    • Add the chopped celery, red onion, and diced apple (if using) to the dressing. Stir to combine.
  4. Combine with Chicken:
    • Add the shredded or diced chicken to the bowl. Mix until the chicken is evenly coated with the dressing.
  5. Season and Garnish:
    • Season the chicken salad with garlic powder, salt, and pepper to taste. Stir in the chopped fresh parsley, if desired.
  6. Chill and Serve:
    • Cover the bowl and refrigerate the chicken salad for at least 1 hour before serving to allow the flavors to meld.
  7. Serving Suggestions:
    • Serve the chicken salad on a bed of lettuce, as a sandwich filling, or with crackers.
