Chocolate-Covered Cookie Dough Truffles

 

Ingredients:

For the Cookie Dough:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips

For the Coating:

  • 2 cups semi-sweet chocolate chips or chocolate melting wafers
  • 1 tablespoon vegetable oil or shortening (optional, for smoother melting)
  • Additional mini chocolate chips for garnish (optional)

Instructions:

  1. Prepare the Cookie Dough:
    • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
    • Add the milk and vanilla extract, mixing until well combined.
    • Gradually add the flour and salt, mixing until a dough forms.
    • Stir in the mini chocolate chips.
  2. Form the Truffles:
    • Using a small cookie scoop or spoon, scoop out small portions of the cookie dough and roll them into balls.
    • Place the cookie dough balls on a baking sheet lined with parchment paper.
    • Freeze the cookie dough balls for at least 30 minutes, or until firm.
  3. Prepare the Chocolate Coating:
    • In a microwave-safe bowl, melt the semi-sweet chocolate chips or chocolate melting wafers in 30-second intervals, stirring between each interval, until smooth. (Alternatively, you can melt the chocolate using a double boiler.)
    • If using, stir in the vegetable oil or shortening to help thin the chocolate for easier coating.
  4. Coat the Truffles:
    • Using a fork or dipping tool, dip each cookie dough ball into the melted chocolate, making sure it is fully coated.
    • Allow any excess chocolate to drip off before placing the coated truffle back on the parchment-lined baking sheet.
    • Immediately sprinkle the tops with additional mini chocolate chips, if desired.
  5. Set the Truffles:
    • Allow the chocolate coating to set completely at room temperature, or place the truffles in the refrigerator to speed up the setting process.
  6. Serve:
    • Once the chocolate is set, the truffles are ready to be served.
    • Store any leftovers in an airtight container in the refrigerator.
