Chocolate Cherry Cheesecake Bars


For the chocolate mixture:
3 cups flour
2/3 cup cocoa
3/4 cup brown sugar
1 1/2 cups cold butter
For the cheese filling:
2 cups (1 pound) cream cheese
1 cup 1 cup sugar
2 teaspoons vanilla extract
2 tablespoons lemon juice
2 large eggs
1/3 cup fresh or frozen, divided into

Chocolate chips (optional):
1/2 cup chocolate chips
2 tablespoons butter

Preheat the oven to 350°. Fahrenheit (175°C). Leave a 9 by 13 sheet rectangle or line it with parchment paper.
Blend flour, brown sugar, cocoa and butter in a food processor until smooth. Alternatively, you can use a frying pan or two oil graters to separate the oil into the dry ingredients.
Reserve 1 cup of streusel mixture for garnish. Press remaining mixture into bottom of prepared pan.
Bake the base for 25 minutes and let it cool slightly.
To make the filling, mix cream cheese, sugar, lemon juice and vanilla extract until smooth. Add the eggs one by one and mix.
Spread the cheesecake mixture over the glaze. Sprinkle chopped cherries on top.
Crumble the remaining mixture and sprinkle it over the cheesecake.
Reduce the oven temperature to 325°F (163°C) and bake for 35-40 minutes until the cheesecake is cooked through.
Allow it to cool completely before cutting. For optional chocolate, melt chocolate chips into whipped cream and pour over bars.
Store in an airtight container in the refrigerator. Good cooling.
