Cheesy Spinach-Stuffed Meatballs

 

Ingredients:

For the Meatballs:

  • 1 lb (450g) ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Filling:

  • 1 cup fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 1/4 cup ricotta cheese

For Topping:

  • 1/2 cup shredded mozzarella cheese

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
  2. Prepare the Meatballs:
    • In a large mixing bowl, combine the ground beef or turkey, breadcrumbs, grated Parmesan cheese, egg, finely chopped onion, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  3. Prepare the Filling:
    • In a medium bowl, mix together the chopped spinach, shredded mozzarella cheese, and ricotta cheese.
  4. Form the Meatballs:
    • Take a small portion of the meat mixture and flatten it in the palm of your hand. Place a small amount of the spinach and cheese filling in the center, then fold the meat around the filling to form a ball. Make sure the filling is completely enclosed.
    • Place the meatballs on the prepared baking sheet or dish.
  5. Bake the Meatballs:
    • Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and the internal temperature reaches 165°F (74°C).
  6. Add the Topping:
    • Remove the meatballs from the oven and sprinkle the shredded mozzarella cheese over the top of each meatball.
    • Return the meatballs to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Remove the meatballs from the oven and let them cool slightly before serving.
    • Garnish with fresh parsley if desired and serve hot.

Tips:

  • These meatballs can be served with marinara sauce and pasta for a complete meal.
  • You can customize the filling by adding other ingredients such as chopped mushrooms or sun-dried tomatoes.
