Cheesy Beef and Potato Casserole

 

Ingredients:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 3 cups diced potatoes (about 3-4 medium potatoes)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped tomatoes
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat your oven:
    • Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the Ground Beef:
    • In a large skillet, cook the ground beef over medium heat until browned. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  3. Prepare the Sauce:
    • In a medium bowl, mix together the cream of mushroom soup, sour cream, milk, salt, black pepper, paprika, and dried thyme.
  4. Combine the Ingredients:
    • In the skillet with the cooked ground beef, add the diced potatoes and the soup mixture. Stir to combine.
    • Transfer the beef and potato mixture to the prepared baking dish. Spread it out evenly.
  5. Bake the Casserole:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes, or until the potatoes are tender.
    • Remove the foil and sprinkle the shredded cheddar cheese and mozzarella cheese over the top. Add the chopped tomatoes.
    • Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Remove the casserole from the oven and let it cool slightly. Garnish with chopped fresh parsley, if desired.
    • Serve warm and enjoy your cheesy beef and potato casserole!
