Cheesy Beef and Potato Bake


  • 4 large potatoes, peeled and sliced into thin rounds
  • 1 lb (450 g) ground beef
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz/400 g) diced tomatoes, drained
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)


  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Potatoes:
    • Peel and slice the potatoes into thin rounds.
    • Place the potato slices in a large pot of salted water and bring to a boil. Cook for about 5 minutes until slightly tender. Drain and set aside.
  3. Cook the Ground Beef:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chopped onion and cook until translucent, about 3-4 minutes.
    • Add the minced garlic and cook for another minute.
    • Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
    • Stir in the diced tomatoes, tomato paste, beef broth, paprika, cumin, oregano, salt, and black pepper.
    • Let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
  4. Assemble the Dish:
    • In a greased 9×13-inch baking dish, layer half of the potato slices.
    • Spoon half of the beef mixture over the potatoes.
    • Sprinkle half of the shredded cheddar and mozzarella cheese over the beef.
    • Repeat the layers with the remaining potatoes, beef mixture, and cheese.
  5. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
    • Remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden and bubbly.
  6. Serve:
    • Let the dish cool for a few minutes before serving.
    • Garnish with fresh parsley if desired.
    • Serve hot and enjoy!
