Cheese and Potato Fritters

 

Ingredients:

  • 2 large potatoes, peeled and grated
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup finely chopped green onions
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying

Instructions:

  1. Prepare the Potatoes:
    • Grate the potatoes and place them in a clean kitchen towel. Squeeze out as much excess moisture as possible. This will help the fritters become crispy.
  2. Mix Ingredients:
    • In a large bowl, combine the grated potatoes, shredded cheddar cheese, grated Parmesan cheese, chopped green onions, and minced garlic.
    • Add the beaten eggs and mix well.
    • Sprinkle the flour, baking powder, salt, and black pepper over the mixture. Stir until well combined.
  3. Heat the Oil:
    • In a large skillet, pour enough vegetable oil to cover the bottom of the pan. Heat the oil over medium-high heat until it reaches about 350°F (175°C).
  4. Form and Fry the Fritters:
    • Using a spoon or your hands, scoop about 2 tablespoons of the potato mixture and shape it into a small patty or ball.
    • Carefully place the fritters into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
    • Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.
  5. Serve:
    • Serve the fritters hot, garnished with extra green onions or a sprinkle of Parmesan cheese if desired. These fritters are perfect on their own or with a dipping sauce such as sour cream, ranch, or a spicy aioli.
