Brioche Buns

Ingredients

▢3/4 cup milk
▢1 1/2 teaspoons active dry yeast
▢1/4 cup sugar + 1 tablespoon
▢1 teaspoon salt
▢4 cups all-purpose flour
▢3 large eggs + 1 extra for beaten Egg
▢1/2 cup unsalted butter

Instructions

Prepare the yeast mixture
Begin by making the yeast mixture. You should add 3/4 cup warm milk (about 105 degrees Fahrenheit) to a large measuring cup along with 1 1/2 teaspoons yeast and 1 tablespoon granulated sugar.

Whisk quickly and let sit until foamy, about 10 minutes.
Add everything except the butter to the mixer.
Now place the hook on a stand mixer and add 4 cups all-purpose flour (spooned and spread with a knife), 1/4 cup granulated sugar, 1 teaspoon salt, 3 large eggs to the foamy yeast mixture.

Start mixing at low speed.Once the flour is incorporated into the dough, increase the speed to high. You should continue mixing the dough on high speed until it takes shape. So about 4-5 minutes.
Add the softened butter.
Now cut half a cup of softened, unsalted butter into pieces and add it to the dough.

Continue mixing the dough on high speed for another 5-10 minutes or until the dough no longer sticks to the sides of the mixing bowl.At this point it should have a soft and elastic texture. Be patient with the dough, this step may take a while.
Place the dough in a greased bowl to ferment.

Now place the shaped dough in a lightly greased bowl (I use olive oil). Cover the dough with a kitchen towel or plastic wrap and let it rest until it has doubled in size, about an hour. To speed this up, place it in the oven on the done setting.Form into 12 rolls and let rise again.

Now punch out the dough and divide it into 12 equal pieces. Form each piece of dough into round balls.
Place the brioche dough balls in a 23 x 33 cm deep baking dish and let them rest, covered, for another hour. You don’t need to double in size in this step.

Brush with egg mixture and bake.
Now prepare the egg mixture by mixing 1 egg with a teaspoon of water and brushing it onto each bun with a pastry brush.Bake the brioche buns in the oven at 350 degrees Fahrenheit for about 25 minutes.
