Ingredients:

  • 3 pounds beef chuck roast, cut into large chunks
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup red wine (optional, can substitute with more beef broth)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 cup cherry tomatoes, halved
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Beef:
    • Season the beef chunks generously with salt and pepper.
    • In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat.
    • Add the beef chunks to the pot in batches, searing them on all sides until browned. Remove the beef from the pot and set aside.
  2. Sauté the Vegetables:
    • In the same pot, add the diced onion and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Deglaze and Build the Sauce:
    • Pour in the beef broth, scraping up any browned bits from the bottom of the pot.
    • Stir in the diced tomatoes, tomato paste, and red wine (if using).
    • Add the Worcestershire sauce, dried thyme, dried rosemary, and bay leaves. Stir to combine.
  4. Braise the Beef:
    • Return the seared beef chunks to the pot, ensuring they are submerged in the liquid.
    • Bring the mixture to a simmer, then reduce the heat to low.
    • Cover the pot with a lid and let it cook for 2.5 to 3 hours, or until the beef is tender and easily falls apart.
  5. Add the Cherry Tomatoes:
    • About 30 minutes before the end of the cooking time, add the halved cherry tomatoes to the pot.
    • Stir to combine and let the tomatoes cook until they are softened.
  6. Finish and Serve:
    • Remove the bay leaves from the pot and discard.
    • Taste and adjust the seasoning with salt and pepper if needed.
    • Garnish with chopped fresh parsley.
