Blueberry Muffins

 

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • Optional: coarse sugar for topping

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. Prepare the Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, salt, and baking powder.
  3. Mix the Wet Ingredients:
    • In a medium bowl, whisk together the vegetable oil, egg, milk, and vanilla extract.
  4. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  5. Add the Blueberries:
    • Gently fold the blueberries into the batter.
  6. Fill the Muffin Tin:
    • Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. If desired, sprinkle coarse sugar on top of each muffin for a sweet, crunchy topping.
  7. Bake the Muffins:
    • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool and Serve:
    • Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
