Ingredients:

1 pound beef tenderloin, cleaned

2 tablespoons olive oil

Prepare the mushroom duxelles:
In the same pan, add the chopped mushrooms, garlic and thyme. Cook until the mushrooms release their moisture and turn golden brown. Remove excess liquid.
Stir the mushroom mixture until a thick paste forms.This is known as Duxelles mushroom.

Brush the beef:

Brush the cooled beef with Dijon mustard. If necessary, spread a layer of pate over the meat.

Spread a layer of mushroom duxelles on the meat.
Puff pastry roll:
Roll out the puff pastry on a floured surface.Place the meat in the center and wrap it with the puff pastry, sealing the edges.

Cooling:

Chill the wrapped meat in the refrigerator for at least 15-20 minutes so that the dough sets.
Preheat the oven:
Preheat the oven to 400°F (200°C).
