Preparation
1. Prepare the Beef
Preheat the oven to 375°F (190°C).
Cook the ground beef and onion in a large skillet over medium-high heat for 6–8 minutes, breaking the beef into small crumbles.
Drain excess grease, then add the garlic and cook for 30 seconds.
2. Season
Add the taco seasoning and water. Stir well and simmer for 3–4 minutes until the beef is flavorful and most of the liquid has been absorbed.
Stir in the black beans and remove from the heat.

3. Assemble the Nachos
Spread half of the tortilla chips across the bottom of a large 9×13-inch baking dish.
Top with half of the seasoned beef mixture and half of both cheeses.
Add another layer of tortilla chips, followed by the remaining beef and cheese.
4. Bake
Bake uncovered for 10–15 minutes, or until the cheese is completely melted and bubbling around the edges.
Avoid overbaking so the tortilla chips remain crisp.
5. Add the Fresh Toppings
Remove the nacho bake from the oven and immediately scatter the diced tomatoes, green bell pepper, jalapeño, and green onions over the top.
6. Serve
Serve warm directly from the baking dish with sour cream, salsa, guacamole, shredded lettuce, or your favorite taco toppings.
Helpful Tips
Use sturdy restaurant-style tortilla chips because thin chips can soften quickly underneath the beef and cheese.
Drain the cooked beef well to keep the nachos from becoming greasy or soggy.
For extra flavor, add corn, black olives, pickled jalapeños, or a drizzle of taco sauce before serving.
Storage
Loaded Beef Nacho Bake is best served immediately while the tortilla chips are still crispy. Leftover beef mixture can be stored separately in an airtight container in the refrigerator for up to 4 days.
Crispy chips, savory taco-seasoned beef, melted cheese, and fresh toppings make this easy nacho bake a fun and satisfying meal for sharing.
