Ingredients

Fruit and Nut Mixture

1 cup candied red cherries, halved
1 cup candied pineapple, chopped
1 cup golden raisins
1 cup dark raisins
1/2 cup dried cranberries
1 1/2 cups pecans, roughly chopped
1/2 cup walnuts, roughly chopped
1/3 cup orange juice

Cake Batter

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup unsalted butter, softened
3/4 cup packed brown sugar
3 large eggs, room temperature
1 teaspoon vanilla extract
1 teaspoon orange zest
1/4 cup molasses
1/4 cup whole milk

For the Top

1/4 cup candied cherries
1/4 cup candied pineapple pieces
1/3 cup pecan halves
2 tablespoons apricot preserves, optional for glazing

Preparation Steps

  1. Place the candied cherries, pineapple, golden raisins, dark raisins, dried cranberries, pecans, and walnuts in a large bowl. Pour the orange juice over the mixture, toss well, and let it stand for about 20–30 minutes.
  2. Preheat the oven to 325°F (165°C). Grease a 9×5-inch loaf pan and line it with parchment paper, leaving enough parchment over the sides to make the loaf easier to remove.
  3. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. In a separate large bowl, beat the softened butter and brown sugar for 2–3 minutes until creamy and slightly fluffy.
  5. Add the eggs one at a time, beating well after each addition. Mix in the vanilla, orange zest, and molasses until evenly combined.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix only until the flour disappears. Avoid overmixing.
  7. Drain any excess liquid from the soaked fruit if necessary. Toss the fruit and nut mixture with about 2 tablespoons of flour, then gently fold it into the batter. The batter will be very thick and heavily packed with fruit.
  8. Spoon the batter into the prepared loaf pan and press it gently into the corners. Smooth the top with a spatula.
  9. Arrange the reserved cherries, pineapple, and pecan halves over the top, pressing them lightly into the batter.
  10. Bake for approximately 75–95 minutes. Begin checking after 70 minutes. The loaf is ready when a toothpick inserted into the cake portion comes out with only a few moist crumbs.
  11. If the top becomes too dark before the center is fully baked, loosely cover the loaf with aluminum foil and continue baking.
  12. Allow the fruitcake to cool in the pan for about 20 minutes. Carefully lift it out using the parchment paper and transfer it to a wire rack to cool completely.
  13. For a glossy finish, gently warm the apricot preserves with a teaspoon of water and brush a thin layer over the cooled loaf.

Once completely cool, wrap the fruitcake tightly and allow it to rest overnight before slicing. This gives the fruit, citrus, and warm spices time to blend together and also helps create the rich, moist texture associated with traditional fruitcake.
