Sausage Biscuit & Gravy Casserole

This comforting breakfast casserole combines fluffy golden biscuits, savory breakfast sausage, creamy peppered gravy, and melted cheese in one hearty dish. It’s a deesviral home-style favorite that works beautifully for weekend breakfasts, brunch, or a cozy family meal.

Ingredients

1 lb breakfast sausage
1 can (16.3 oz) refrigerated biscuits
2 cups shredded cheddar cheese
1/4 cup all-purpose flour
2 1/2 cups whole milk
2 tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon salt, or to taste
2 large eggs
1/4 cup milk

Preparation Steps

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the breakfast sausage in a large skillet over medium heat, breaking it into small crumbles. Continue cooking until browned and fully cooked. Drain excess grease, leaving about 2 tablespoons in the skillet for flavor.
  3. Add the butter to the sausage and allow it to melt. Sprinkle the flour over the sausage and stir well. Cook for about 1–2 minutes to remove the raw flour taste.
  4. Slowly pour in 2 1/2 cups of milk while stirring continuously. Add the garlic powder, onion powder, black pepper, and salt. Simmer for several minutes until the gravy becomes thick and creamy.
  5. Remove the skillet from the heat and set the sausage gravy aside.
  6. Cut the refrigerated biscuits into halves or quarters, depending on their size. Arrange about half of the biscuit pieces across the bottom of the prepared baking dish.
  7. In a small bowl, whisk together the eggs and 1/4 cup milk. Pour evenly over the biscuit layer.
  8. Spoon the warm sausage gravy over the biscuits, spreading the sausage pieces evenly throughout the casserole.
  9. Sprinkle most of the shredded cheddar cheese over the gravy, reserving a little for the top.
  10. Arrange the remaining biscuit pieces over the casserole, leaving a little space between them so they can rise and become golden while baking. Sprinkle the reserved cheese over and around the biscuits.
  11. Bake uncovered for approximately 25–35 minutes, or until the biscuits are puffed and deeply golden on top and the casserole is bubbling around the edges. If the biscuit tops brown too quickly, loosely cover the dish with foil for the final few minutes.
  12. Allow the casserole to rest for about 5–10 minutes before serving. This gives the creamy gravy time to settle and makes serving easier.
