Savory Ham, Cheese, and Pea Muffins

 

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 cup cooked ham, diced
  • 1 cup frozen peas, thawed

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
    • Line a muffin tin with paper liners or grease it well.
  2. Prepare the Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.
  3. Prepare the Wet Ingredients:
    • In a separate bowl, whisk together the buttermilk, eggs, and vegetable oil until well combined.
  4. Combine Ingredients:
    • Add the wet ingredients to the dry ingredients and stir until just combined.
    • Fold in the shredded cheese, diced ham, and thawed peas until evenly distributed.
  5. Fill Muffin Tin:
    • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake the Muffins:
    • Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  7. Cool and Serve:
    • Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
