Chicken Spinach Alfredo Lasagna Recipe

 

Ingredients:

  • For the Alfredo Sauce:
    • 1/2 cup unsalted butter
    • 2 cups heavy cream
    • 4 cloves garlic, minced
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon nutmeg
    • 1 cup grated Parmesan cheese
  • For the Lasagna:
    • 12 lasagna noodles
    • 3 cups cooked chicken, shredded
    • 2 cups fresh spinach, chopped
    • 2 cups ricotta cheese
    • 1 egg
    • 2 cups shredded mozzarella cheese
    • 1 cup grated Parmesan cheese
    • 1 cup cherry tomatoes, halved
    • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Alfredo Sauce:
    • In a medium saucepan, melt the butter over medium heat.
    • Add the minced garlic and sauté for about 1 minute until fragrant.
    • Pour in the heavy cream and bring to a simmer.
    • Stir in the salt, pepper, and nutmeg.
    • Reduce the heat to low and gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. Remove from heat and set aside.
  2. Cook the Lasagna Noodles:
    • Bring a large pot of salted water to a boil.
    • Cook the lasagna noodles according to the package instructions until al dente.
    • Drain the noodles and rinse them with cold water to prevent sticking. Set aside.
  3. Prepare the Ricotta Mixture:
    • In a medium bowl, combine the ricotta cheese and egg. Mix well until smooth.
  4. Assemble the Lasagna:
    • Preheat your oven to 375°F (190°C).
    • Spread a thin layer of the Alfredo sauce on the bottom of a 9×13-inch baking dish.
    • Place 3 lasagna noodles over the sauce.
    • Spread 1/3 of the ricotta mixture over the noodles.
    • Sprinkle 1/3 of the shredded chicken, 1/3 of the chopped spinach, and a handful of cherry tomatoes over the ricotta.
    • Pour 1/4 of the Alfredo sauce over the layer and sprinkle with 1/3 of the shredded mozzarella cheese and 1/3 of the grated Parmesan cheese.
    • Repeat the layers twice more, ending with a final layer of lasagna noodles topped with the remaining Alfredo sauce and cheeses.
  5. Bake the Lasagna:
    • Cover the baking dish with aluminum foil.
    • Bake in the preheated oven for 25 minutes.
    • Remove the foil and bake for an additional 20-25 minutes, or until the cheese is bubbly and golden brown.
  6. Serve:
    • Remove the lasagna from the oven and let it cool for 10 minutes before slicing.
    • Garnish with chopped fresh parsley.
