Egg and Avocado Wraps

 

Ingredients:

  • 4 large eggs
  • 2 ripe avocados
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 4 large tortillas
  • Lettuce leaves (optional)
  • Paprika (optional, for garnish)

Instructions:

  1. Boil the Eggs:
    • Place the eggs in a pot of water and bring to a boil. Once boiling, reduce heat and simmer for 10 minutes.
    • Remove from heat, drain, and place eggs in ice water to cool. Peel and set aside.
  2. Prepare the Avocado Mix:
    • Scoop out the flesh of the avocados into a bowl.
    • Add mayonnaise, lemon juice, salt, and pepper. Mash until smooth and creamy.
  3. Assemble the Wraps:
    • Lay a tortilla flat and spread a generous amount of the avocado mixture over it.
    • Place a whole boiled egg in the center and roll the tortilla around it, tucking in the sides as you go.
    • Repeat for the remaining tortillas and eggs.
  4. Garnish and Serve:
    • Slice each wrap into halves or thirds for easier handling.
    • Sprinkle with a little paprika for added flavor and color, if desired.
    • Serve on a bed of lettuce for a fresh touch.
