Powdered Sugar-Coated Pastries

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cut into small pieces
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup water (ice-cold)
  • 1 cup fruit preserves or jam (your choice of flavor)
  • 1 cup powdered sugar

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour and salt.
    • Add the cold butter pieces and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
    • Stir in the granulated sugar and vanilla extract.
    • Gradually add the ice-cold water, one tablespoon at a time, and mix until the dough comes together. Be careful not to overwork the dough.
    • Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Roll and Fill the Pastries:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch.
    • Cut the dough into small rectangles (approximately 3×2 inches).
    • Place a small spoonful of fruit preserves or jam in the center of each rectangle.
    • Roll up each rectangle, enclosing the filling, and place the pastries seam-side down on the prepared baking sheet.
  3. Bake the Pastries:
    • Bake the pastries in the preheated oven for 15-20 minutes, or until they are lightly golden brown.
    • Remove from the oven and allow them to cool on a wire rack.
  4. Coat with Powdered Sugar:
    • Once the pastries have cooled, generously coat them with powdered sugar.
    • You can use a sifter to evenly distribute the powdered sugar over the pastries.
  5. Serve:
    • Arrange the powdered sugar-coated pastries on a serving platter.
    • Enjoy with a cup of tea or coffee!
