Salted Watermelon and Feta Salad

 

 

Ingredients:

  • 4 cups watermelon, cut into cubes or wedges
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1 small red onion, thinly sliced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt (preferably flaky sea salt) and freshly ground black pepper, to taste

Instructions:

  1. Prepare the Watermelon: Cut the watermelon into cubes or wedges, removing the seeds if necessary. Place the watermelon pieces in a large bowl.
  2. Add Feta and Herbs: Add the crumbled feta cheese, chopped mint, and chopped basil to the bowl with the watermelon.
  3. Prepare the Onion: Thinly slice the red onion and add it to the bowl.
  4. Make the Dressing: In a small bowl, whisk together the olive oil and balsamic vinegar until well combined.
  5. Combine and Season: Drizzle the dressing over the watermelon mixture. Gently toss everything together until well combined. Season with salt and freshly ground black pepper to taste.
  6. Serve: Transfer the salad to a serving platter or individual plates. Sprinkle with a little extra flaky sea salt just before serving for an added burst of flavor.
