Tropical Pineapple Coconut Cake Recipe

 

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsweetened coconut milk
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut

For the Frosting:

  • 1 cup unsalted butter, room temperature
  • 4 cups powdered sugar
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut, toasted

For the Topping:

  • Fresh pineapple slices
  • Fresh strawberries
  • Whipped cream
  • Toasted coconut flakes

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Prepare the Cake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, combine the coconut milk and crushed pineapple.
  3. Mix the Wet Ingredients: In a large bowl, beat the butter until creamy. Add the granulated sugar and brown sugar, and beat until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk mixture. Begin and end with the dry ingredients. Fold in the shredded coconut.
  5. Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  6. Prepare the Frosting: In a large bowl, beat the butter until creamy. Gradually add the powdered sugar, beating until smooth. Add the coconut milk and vanilla extract, and beat until the frosting is light and fluffy. Fold in the toasted coconut.
  7. Assemble the Cake: Place one cake layer on a serving plate. Spread a layer of frosting over the top. Place the second cake layer on top and spread frosting over the top and sides of the cake.
  8. Decorate the Cake: Arrange the fresh pineapple slices and strawberries on top of the cake. Add dollops of whipped cream and sprinkle with toasted coconut flakes.
