Strawberry Pound Cake with Strawberry Glaze

 

Ingredients:

For the Cake:

  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 2 cups fresh strawberries, hulled and diced
  • 2 tablespoons all-purpose flour (for coating strawberries)

For the Strawberry Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh strawberry puree (made by blending fresh strawberries)
  • 1 tablespoon lemon juice
  • Fresh strawberries and red sprinkles for garnish (optional)

Instructions:

  1. Preheat your oven:
    • Preheat the oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.
  2. Prepare the Cake Batter:
    • In a large bowl, beat the butter and sugar together until light and fluffy, about 3-4 minutes.
    • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
    • Toss the diced strawberries with the 2 tablespoons of flour to coat them. Gently fold the coated strawberries into the batter.
  3. Bake the Cake:
    • Pour the batter into the prepared loaf pan and spread it evenly.
    • Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  4. Prepare the Strawberry Glaze:
    • In a small bowl, whisk together the powdered sugar, strawberry puree, and lemon juice until smooth. The glaze should be thick but pourable.
  5. Glaze the Cake:
    • Once the cake is completely cooled, drizzle the strawberry glaze over the top, allowing it to drip down the sides.
    • Garnish with fresh strawberries and red sprinkles if desired.
