Steamed Semolina and Poppy Seed Cake

 

Ingredients:

  • 1 cup semolina (sooji)
  • 1/2 cup sugar
  • 1/4 cup poppy seeds
  • 1/2 cup yogurt
  • 1/2 cup milk
  • 1/4 cup melted butter or ghee
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Prepare the Batter:
    • In a large mixing bowl, combine the semolina, sugar, and poppy seeds.
    • Add the yogurt, milk, melted butter, and vanilla extract to the dry ingredients. Mix well until all ingredients are combined and the batter is smooth.
    • Let the batter rest for 15-20 minutes to allow the semolina to absorb the liquids.
  2. Prepare the Steamer:
    • While the batter is resting, prepare a steamer. You can use a traditional steamer or a large pot with a steamer insert. Fill the bottom with water and bring it to a gentle simmer.
  3. Add Leavening Agents:
    • After the resting period, add the baking powder, baking soda, and a pinch of salt to the batter. Mix gently until well incorporated.
  4. Prepare the Mold:
    • Grease a bundt pan or any cake mold with butter or oil. You can also line it with parchment paper for easier removal.
  5. Pour and Steam:
    • Pour the batter into the prepared mold, spreading it evenly.
    • Place the mold in the steamer, cover, and steam for 30-40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Ensure the water in the steamer does not touch the batter.
  6. Cool and Serve:
    • Once cooked, remove the mold from the steamer and let the cake cool in the mold for 10-15 minutes.
    • Carefully invert the cake onto a serving plate.
    • Slice and serve the cake warm or at room temperature.
