Salted Pancakes with Minced Meat

Ingredients

For the Pancakes:

  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter or oil
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Minced Meat Filling:

  • 1/2 pound ground beef or any minced meat of your choice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced tomatoes
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Pancake Batter:
    • In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
    • In another bowl, beat the egg, then add the milk and melted butter or oil. Mix well.
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay. Let the batter rest while you prepare the filling.
  2. Cook the Minced Meat Filling:
    • Heat the olive oil in a skillet over medium heat. Add the chopped onions and garlic, and sauté until they become translucent.
    • Add the ground beef (or minced meat) to the skillet. Cook until browned, breaking it apart with a spoon as it cooks.
    • Once the meat is browned, add the diced bell peppers and tomatoes to the skillet. Cook for another 3-4 minutes until the vegetables are tender.
    • Season the mixture with paprika, cumin, salt, and pepper. Stir to combine. Taste and adjust seasoning if needed. Remove from heat and set aside.
  3. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
    • Pour a ladleful of pancake batter onto the skillet to form a pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
    • Spoon a portion of the minced meat filling onto one half of the pancake. Fold the other half over the filling to create a half-moon shape.
    • Cook for another 1-2 minutes, until the pancake is cooked through and golden brown on both sides. Repeat with the remaining batter and filling.
  4. Serve:
    • Serve the salted pancakes with minced meat warm, garnished with fresh herbs if desired.
