Ingredients:

For the Cake:
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh or canned peaches, peeled, pitted, and chopped
  • 1/2 cup fresh raspberries
For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract
For Topping:
  • Fresh raspberries
  • Fresh mint leaves (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Prepare the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Prepare the Wet Ingredients:
    • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Fold in the Fruit:
    • Gently fold in the chopped peaches and raspberries, being careful not to crush the berries.
  6. Bake the Cake:
    • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
    • Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center of the cake comes out clean.
    • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Prepare the Glaze:
    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and pourable. Add more milk if needed to reach the desired consistency.
  8. Assemble the Cake:
    • Once the cake is completely cooled, drizzle the glaze over the top.
    • Garnish with fresh raspberries and mint leaves if desired.
  9. Serve:
    • Slice and serve the cake, enjoying the burst of fruity flavors and the moist, tender crumb.
