No-Bake Strawberry Cream Dessert Recipe

 

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 1 cup heavy whipping cream, cold
  • 8 oz (225g) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package (3 oz) strawberry gelatin (Jell-O)
  • 1 cup boiling water
  • 1 cup cold water
  • 2 cups fresh strawberries, chopped

For Garnish:

  • Whipped cream
  • Fresh strawberries, halved or sliced

Instructions:

1. Prepare the Crust:

  1. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter.
  2. Press the mixture evenly into the bottom of a 9×13 inch baking dish.
  3. Place the dish in the refrigerator to set while you prepare the filling.

2. Prepare the Filling:

  1. In a small bowl, dissolve the strawberry gelatin in 1 cup of boiling water. Stir until completely dissolved, then add 1 cup of cold water. Set aside to cool to room temperature.
  2. In a large mixing bowl, beat the heavy whipping cream until stiff peaks form. Set aside.
  3. In another bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, and beat until well combined.
  4. Gradually add the cooled gelatin mixture to the cream cheese mixture, beating continuously until well combined.
  5. Gently fold in the whipped cream until fully incorporated.
  6. Fold in the chopped strawberries.

3. Assemble the Dessert:

  1. Pour the strawberry cream filling over the prepared crust in the baking dish.
  2. Smooth the top with a spatula.

4. Chill:

  1. Refrigerate the dessert for at least 4 hours, or until set.

5. Garnish and Serve:

  1. Before serving, garnish the top with whipped cream and fresh strawberry slices or halves.
  2. Cut into squares and serve chilled.

Tips:

  • For a more intense strawberry flavor, you can add a few tablespoons of strawberry puree to the filling.
  • Make sure the cream cheese is softened to avoid lumps in the filling.
  • This dessert can be made a day in advance and stored in the refrigerator until ready to serve.
