Moist Chocolate Cake with Glossy Chocolate Frosting

 

Ingredients:

For the Cake:
  • 1 3/4 cups (220g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) boiling water
For the Frosting:
  • 1 cup (230g) unsalted butter, softened
  • 2/3 cup (55g) unsweetened cocoa powder
  • 3 cups (360g) powdered sugar
  • 1/3 cup (80ml) whole milk
  • 2 teaspoons vanilla extract

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch (23×33 cm) baking pan.
  2. Make the Cake Batter:
    • In a large mixing bowl, stir together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for about 2 minutes.
    • Stir in the boiling water until well combined. The batter will be thin, but that’s okay.
  3. Bake the Cake:
    • Pour the batter into the prepared baking pan.
    • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool in the pan for about 10 minutes, then remove it to a wire rack to cool completely.
  4. Prepare the Frosting:
    • In a medium bowl, beat the softened butter until creamy.
    • Sift the cocoa powder into the butter and mix until well combined.
    • Add the powdered sugar and milk, alternating between them, and beat on medium speed until the frosting is smooth and creamy.
    • Stir in the vanilla extract.
  5. Frost the Cake:
    • Once the cake has cooled completely, spread the frosting evenly over the top.
    • For a smooth, glossy finish, use a spatula or knife dipped in hot water to smooth the frosting.
  6. Serve and Enjoy:
    • Cut the cake into squares and serve.
    • Optionally, you can wrap individual pieces in plastic wrap for easy storage or gifting.
