Lemon Garlic Butter Chicken Thighs with Green Beans

 

Ingredients:

  • 6 boneless, skinless chicken thighs
  • 1 lb (450 g) green beans, trimmed
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Lemon slices for garnish
  • Fresh parsley, chopped for garnish

Instructions:

  1. Prepare the Chicken:
    • Pat the chicken thighs dry with paper towels.
    • In a small bowl, mix together the paprika, thyme, oregano, salt, and pepper. Rub this spice mixture all over the chicken thighs.
  2. Cook the Chicken:
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
    • Add the chicken thighs to the skillet and cook for 5-6 minutes per side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Prepare the Green Beans:
    • In the same skillet, add the remaining tablespoon of olive oil and the green beans.
    • Sauté the green beans for about 5 minutes, or until they start to become tender.
  4. Add Garlic and Butter:
    • Push the green beans to one side of the skillet and add the butter to the other side.
    • Once the butter has melted, add the minced garlic and cook for about 1 minute, until fragrant.
  5. Combine and Add Lemon:
    • Return the chicken thighs to the skillet, nestling them among the green beans.
    • Pour the lemon juice over the chicken and green beans.
    • Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  6. Garnish and Serve:
    • Garnish the dish with fresh parsley and lemon slices.
    • Serve hot and enjoy!
