Jalapeño Popper Chicken Roll-Ups

  1. Prepare the Filling:
    • In a medium bowl, mix the softened cream cheese and shredded cheddar cheese until well combined.
  2. Assemble the Roll-Ups:
    • Spread a generous amount of the cream cheese mixture over each chicken breast.
    • Place a few slices of jalapeños on top of the cream cheese mixture.
    • Roll up each chicken breast tightly, starting from one end, and secure with toothpicks if necessary.
  3. Bread the Chicken:
    • In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper.
    • Dip each chicken roll-up into the beaten eggs, then coat with the breadcrumb mixture, pressing lightly to adhere.
  4. Bake the Roll-Ups:
    • Place the breaded chicken roll-ups in a greased baking dish.
    • If using, brush the tops with BBQ sauce for added flavor.
    • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the breading is golden brown.
  5. Add Mozzarella:
    • In the last 5 minutes of baking, sprinkle shredded mozzarella cheese over the top of the chicken roll-ups.
    • Continue baking until the cheese is melted and bubbly.
  6. Serve:
    • Remove from the oven and let the roll-ups rest for a few minutes before slicing.
    • Serve hot, garnished with extra jalapeño slices or chopped parsley if desired.
