Gooey Butter Cake

 

Ingredients:

For the Cake Base:

  • 1 package (15.25 ounces) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 2 large eggs

For the Gooey Topping:

  • 8 ounces cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 1/2 cup unsalted butter, melted

  1. Prepare the Oven and Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9×13 inch baking pan or line it with parchment paper.
  2. Make the Cake Base:
    • In a large mixing bowl, combine the yellow cake mix, melted butter, and eggs.
    • Mix until well combined and a dough forms.
    • Press the dough evenly into the bottom of the prepared baking pan.
  3. Prepare the Gooey Topping:
    • In a separate mixing bowl, beat the cream cheese until smooth and creamy.
    • Add the eggs and vanilla extract, and mix until fully incorporated.
    • Gradually add the powdered sugar, mixing well after each addition.
    • Finally, add the melted butter and mix until smooth.
  4. Assemble the Cake:
    • Pour the gooey topping mixture over the cake base, spreading it evenly with a spatula.
  5. Bake the Cake:
    • Bake in the preheated oven for 40-45 minutes, or until the top is set and lightly golden brown.
    • The center should still be slightly gooey.
  6. Cool and Serve:
    • Allow the cake to cool completely in the pan before cutting into squares.
    • Serve at room temperature or chilled.
