Fruit Swirl Cheesecake Recipe

 

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/2 cup fruit puree (such as raspberry, strawberry, or blueberry)

For the garnish:

  • Fresh fruits (berries, pineapple slices, mandarin orange segments)
  • Fresh mint leaves
  • Powdered sugar for dusting

Instructions:

  1. Prepare the crust:
    • Preheat your oven to 325°F (160°C).
    • In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
    • Press the mixture firmly into the bottom of a 9-inch springform pan.
    • Bake for 10 minutes, then let cool.
  2. Prepare the cheesecake filling:
    • In a large mixing bowl, beat the cream cheese and sugar until smooth.
    • Add the eggs one at a time, beating well after each addition.
    • Mix in the vanilla extract, sour cream, and flour until just combined.
  3. Create the fruit swirl:
    • Pour half of the cheesecake batter over the cooled crust.
    • Drop spoonfuls of fruit puree over the batter and use a knife to swirl the puree into the batter.
    • Pour the remaining cheesecake batter over the top and repeat the swirling process with more fruit puree.
  4. Bake the cheesecake:
    • Place the springform pan in a larger baking dish. Pour hot water into the larger dish to create a water bath (the water should reach halfway up the sides of the springform pan).
    • Bake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly.
    • Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
    • Remove the cheesecake from the oven and water bath. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  5. Garnish and serve:
    • Carefully remove the cheesecake from the springform pan and transfer it to a serving plate.
    • Garnish with fresh fruits, mint leaves, and a dusting of powdered sugar.
    • Slice and enjoy your beautiful fruit swirl cheesecake!
