Custard Slices (Mille-Feuille)

 

Ingredients:

For the Pastry:

  • 1 package of puff pastry (2 sheets)
  • Powdered sugar (for dusting)

For the Custard:

  • 4 cups whole milk
  • 1 cup granulated sugar
  • 1/2 cup cornstarch
  • 6 large egg yolks
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter

For the Assembly:

  • Powdered sugar (for dusting)

Instructions:

  1. Prepare the Pastry:
    • Preheat your oven to 400°F (200°C).
    • Roll out the puff pastry sheets on a lightly floured surface to smooth them out.
    • Place the sheets on a baking tray lined with parchment paper. Prick the pastry all over with a fork to prevent it from puffing too much.
    • Place another piece of parchment paper on top of the pastry and another baking tray on top to weigh it down.
    • Bake in the preheated oven for 15-20 minutes until golden brown and crisp.
    • Remove from the oven and let cool completely. Once cooled, cut each sheet into equal-sized rectangles or squares to fit your serving dish.
  2. Prepare the Custard:
    • In a medium saucepan, combine the milk and half of the sugar. Heat over medium heat until it starts to simmer.
    • In a separate bowl, whisk together the remaining sugar, cornstarch, and egg yolks until smooth.
    • Gradually pour the hot milk into the egg mixture, whisking constantly to prevent curdling.
    • Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the custard thickens and comes to a boil.
    • Remove from heat and stir in the vanilla extract, salt, and butter until smooth.
    • Pour the custard into a bowl, cover with plastic wrap touching the surface to prevent a skin from forming, and let it cool to room temperature.
  3. Assemble the Slices:
    • Place one layer of the puff pastry at the bottom of your serving dish.
    • Spread the cooled custard evenly over the pastry layer.
    • Top with the second layer of puff pastry.
    • Refrigerate for at least 2 hours to set.
  4. Serve:
    • Dust the top with powdered sugar before serving.
    • Cut into squares or rectangles and enjoy your homemade custard slices.
