Creamy Vegetable Salad

 

Ingredients:

  • 1 large cucumber, chopped
  • 2 medium tomatoes, chopped
  • 1 red onion, thinly sliced
  • 1 bell pepper, chopped
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions:

  1. Prepare the Vegetables:
    • Chop the cucumber, tomatoes, bell pepper, and red onion into bite-sized pieces.
    • If using canned corn, drain and rinse it.
  2. Mix the Dressing:
    • In a large bowl, combine the mayonnaise, sour cream, and lemon juice. Mix well until smooth.
    • Season with salt and pepper to taste.
  3. Combine Ingredients:
    • Add the chopped vegetables and corn to the dressing.
    • Gently toss the ingredients until the vegetables are well-coated with the creamy dressing.
  4. Chill and Serve:
    • Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
    • Garnish with fresh herbs if desired before serving.
