Creamy Chicken and Broccoli Casserole

Ingredients:

For the Chicken and Broccoli:

  • 2 cups broccoli florets
  • 2 cups cooked chicken breast, diced
  • 1 cup shredded mozzarella cheese

For the Sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Prepare the Broccoli:
    • Preheat your oven to 375°F (190°C).
    • In a large pot of boiling water, cook the broccoli florets for about 2-3 minutes until tender-crisp. Drain and set aside.
  2. Prepare the Sauce:
    • In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute until the mixture is bubbly and golden.
    • Gradually whisk in the chicken broth and heavy cream, stirring constantly until the sauce thickens, about 3-5 minutes.
    • Stir in the grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Assemble the Casserole:
    • In a large mixing bowl, combine the cooked chicken, blanched broccoli, and prepared sauce. Mix well until everything is evenly coated.
    • Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the shredded mozzarella cheese evenly over the top.
  4. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.
  5. Serve:
    • Allow the casserole to cool slightly before serving. Enjoy this creamy and comforting dish!

This creamy chicken and broccoli casserole is perfect for a hearty family dinner. Enjoy the delicious combination of tender chicken, fresh broccoli, and rich, cheesy sauce!
