Cheesy Potato Frittata

 

Ingredients:

  • 4 medium potatoes, peeled and sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1/2 cup diced bell pepper (red or green)
  • 1/4 cup chopped green onions
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Prepare the Potatoes:
    • Heat the olive oil in a large oven-safe skillet over medium heat.
    • Add the sliced potatoes and cook until golden brown on both sides, about 5-7 minutes per side. Remove from the skillet and set aside.
  2. Prepare the Egg Mixture:
    • In a medium bowl, whisk together the eggs, heavy cream, diced bell pepper, chopped green onions, salt, black pepper, and garlic powder until well combined.
  3. Assemble the Frittata:
    • Preheat your oven to 375°F (190°C).
    • In the same skillet, arrange the fried potato slices in an even layer.
    • Pour the egg mixture over the potatoes, spreading it out evenly.
    • Sprinkle the shredded mozzarella cheese over the top.
  4. Cook the Frittata:
    • Place the skillet in the preheated oven and bake for 20-25 minutes, or until the eggs are set and the cheese is melted and bubbly.
  5. Garnish and Serve:
    • Remove the frittata from the oven and let it cool for a few minutes.
    • Garnish with chopped fresh parsley.
    • Slice and serve your cheesy potato frittata warm.
