Cheesy Meatball Bombs Recipe

 

 

Ingredients:

  • For the Meatballs:
    • 1 pound ground beef
    • 1/2 cup breadcrumbs
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup chopped fresh parsley
    • 1 large egg
    • 2 cloves garlic, minced
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 teaspoon Italian seasoning
  • For the Bombs:
    • 1 can refrigerated biscuit dough (8 biscuits)
    • 1 1/2 cups shredded mozzarella cheese
    • 1/4 cup melted butter
    • 2 cloves garlic, minced
    • 1 teaspoon dried parsley
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
  • For Serving:
    • Marinara sauce, for dipping

Instructions:

  1. Prepare the Meatballs:
    • Preheat your oven to 375°F (190°C).
    • In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, salt, pepper, and Italian seasoning. Mix until well combined.
    • Form the mixture into small meatballs, about 1 inch in diameter. You should get approximately 16 meatballs.
    • Place the meatballs on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until cooked through. Remove from the oven and set aside to cool slightly.
  2. Assemble the Bombs:
    • Open the can of refrigerated biscuit dough and separate the biscuits.
    • Flatten each biscuit into a disk using your hands or a rolling pin.
    • Place a small amount of shredded mozzarella cheese in the center of each flattened biscuit.
    • Place a meatball on top of the cheese.
    • Wrap the biscuit dough around the meatball, sealing the edges to form a ball. Repeat with the remaining biscuits and meatballs.
  3. Prepare the Garlic Butter:
    • In a small bowl, combine the melted butter, minced garlic, dried parsley, garlic powder, and onion powder. Mix well.
  4. Bake the Bombs:
    • Place the wrapped meatballs on a baking sheet lined with parchment paper or in a greased baking dish.
    • Brush the tops of the dough-wrapped meatballs with the garlic butter mixture.
    • Bake in the preheated oven for about 12-15 minutes, or until the biscuit dough is golden brown and cooked through.
  5. Serve:
    • Remove the cheesy meatball bombs from the oven and let them cool slightly.
    • Serve warm with marinara sauce on the side for dipping.
