Cheesy Meat Roll with Herbs

 

Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup ice water

For the Filling:

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or ground turkey
  • 1/2 cup bell peppers, finely chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs (or your favorite herbs)
  • 1/2 teaspoon paprika (optional)

For the Topping:

  • 1 egg, beaten (for egg wash)
  • 1/2 cup shredded cheese
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Prepare the Dough:
    • In a large bowl, combine the flour and salt.
    • Add the cold butter cubes and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
    • Gradually add ice water, 1 tablespoon at a time, until the dough comes together.
    • Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Prepare the Filling:
    • In a skillet, heat the olive oil over medium heat.
    • Add the onion and garlic, and sauté until softened.
    • Add the ground meat and cook until browned.
    • Stir in the bell peppers and cook for a few more minutes.
    • Season with salt, black pepper, dried herbs, and paprika.
    • Remove from heat and let the mixture cool.
    • Once cooled, mix in the shredded cheese.
  3. Assemble the Meat Roll:
    • Preheat the oven to 375°F (190°C).
    • On a floured surface, roll out the dough into a large rectangle.
    • Spread the meat filling evenly over the dough, leaving a small border around the edges.
    • Carefully roll up the dough from one long side, like a jelly roll.
    • Place the roll seam-side down on a baking sheet lined with parchment paper.
  4. Bake the Meat Roll:
    • Brush the top of the roll with the beaten egg.
    • Sprinkle with shredded cheese and chopped parsley.
    • Bake for 25-30 minutes, or until the dough is golden brown and the cheese is melted and bubbly.
  5. Serve:
    • Let the meat roll cool slightly before slicing.
    • Serve warm, with your favorite dipping sauce if desired.
