Avocado Egg Wrap Recipe

 

Ingredients:

  • 4 large eggs
  • 2 ripe avocados
  • 1 small onion, finely chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/4 teaspoon paprika or chili powder (optional, for a bit of spice)
  • 4 large tortillas or wraps
  • Optional: fresh herbs (like cilantro or parsley) for garnish

Instructions:

  1. Prepare the Eggs:
    • Place the eggs in a pot and cover them with cold water. Bring the water to a boil, then reduce the heat and simmer for about 10-12 minutes for hard-boiled eggs.
    • Drain the hot water and transfer the eggs to a bowl of ice water to cool. Once cooled, peel the eggs and slice them in half.
  2. Prepare the Avocado Mixture:
    • Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
    • Mash the avocado with a fork until smooth but still slightly chunky.
    • Add the chopped onion, lemon juice, salt, and pepper to the mashed avocado. Mix well to combine.
  3. Assemble the Wraps:
    • Lay out the tortillas or wraps on a flat surface.
    • Spread a generous amount of the avocado mixture onto each tortilla.
    • Place the sliced eggs on top of the avocado mixture. You can arrange them whole or chop them into smaller pieces.
    • Sprinkle a bit of paprika or chili powder over the eggs if desired.
  4. Roll the Wraps:
    • Carefully roll up each tortilla, tucking in the sides as you go to keep the filling inside.
    • Slice the wraps in half if desired, making them easier to eat.
  5. Serve:
    • Garnish with fresh herbs if using.
    • Serve immediately and enjoy!
