Orzo with Italian Sausage and Spinach

This creamy orzo with Italian sausage and spinach is a hearty one-pan style dinner packed with rich, savory flavor. Tender orzo, browned sausage, fresh spinach, garlic, onion, and Parmesan come together in a warm, comforting meal that is perfect for busy weeknights.

Ingredients

  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes, optional

Instructions

  1. Bring a pot of salted water to a boil. Cook the orzo according to the package directions until tender, then drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the Italian sausage and cook until browned, breaking it into small pieces as it cooks.
  4. Stir in the chopped onion and cook for 3–4 minutes, until softened.
  5. Add the minced garlic and cook for about 30 seconds, just until fragrant.
  6. Pour in the chicken broth and scrape the bottom of the skillet to lift all the flavorful browned bits.
  7. Add the chopped spinach and cook until it wilts.
  8. Stir in the cooked orzo and Parmesan cheese until everything is well combined and slightly creamy.
  9. Season with salt, black pepper, and red pepper flakes, if using.
  10. Serve warm with extra Parmesan on top.

Serving Tip

This Italian sausage orzo is delicious on its own, but you can also serve it with garlic bread or a simple green salad for a complete homemade dinner.
