Orzo with Italian Sausage and Spinach
This creamy orzo with Italian sausage and spinach is a hearty one-pan style dinner packed with rich, savory flavor. Tender orzo, browned sausage, fresh spinach, garlic, onion, and Parmesan come together in a warm, comforting meal that is perfect for busy weeknights.
Ingredients
- 1 cup orzo pasta
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
- Red pepper flakes, optional
Instructions
- Bring a pot of salted water to a boil. Cook the orzo according to the package directions until tender, then drain and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the Italian sausage and cook until browned, breaking it into small pieces as it cooks.
- Stir in the chopped onion and cook for 3–4 minutes, until softened.
- Add the minced garlic and cook for about 30 seconds, just until fragrant.
- Pour in the chicken broth and scrape the bottom of the skillet to lift all the flavorful browned bits.
- Add the chopped spinach and cook until it wilts.
- Stir in the cooked orzo and Parmesan cheese until everything is well combined and slightly creamy.
- Season with salt, black pepper, and red pepper flakes, if using.
- Serve warm with extra Parmesan on top.
Serving Tip
This Italian sausage orzo is delicious on its own, but you can also serve it with garlic bread or a simple green salad for a complete homemade dinner.
