Onion and Cheddar Mashed Potato Cakes
Crispy on the outside, soft and cheesy on the inside, these Onion and Cheddar Mashed Potato Cakes are the perfect way to turn leftover mashed potatoes into a delicious homemade dish. They are loaded with sautéed onions, garlic, cheddar cheese, and fresh parsley, making them flavorful, comforting, and easy to prepare.
Ingredients
- 1 teaspoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups mashed potatoes
- 1 3/4 cups flour
- 2 large eggs, beaten
- 1 cup shredded cheddar cheese
- 1/2 cup chopped parsley
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
Heat the olive oil in a skillet over medium heat. Add the diced onion and cook until soft and lightly golden, then add the garlic and cook for another minute. Let the mixture cool slightly.
In a large bowl, combine the mashed potatoes, cooked onion and garlic, flour, beaten eggs, cheddar cheese, parsley, salt, and black pepper. Mix until everything comes together into a thick mixture.

Shape the mixture into small patties. Heat a little oil in a skillet and cook the potato cakes for 3–4 minutes on each side, or until golden brown and crispy.
Serve warm with sour cream, garlic sauce, or your favorite dipping sauce.
Tips
For best results, use cold mashed potatoes because they are easier to shape. If the mixture feels too soft, add a little more flour. Cook the cakes over medium heat so they become crispy outside without burning.
