Ingredients:

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced

Instructions:

  1. Prepare the Pie Crust:
    • In a large mixing bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, stirring until the mixture forms a ball. Wrap in plastic and refrigerate for at least 30 minutes.
    • Roll out the dough on a floured surface to fit a 9-inch pie dish. Place the crust in the dish, pressing evenly into the bottom and sides.
  2. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  3. Prepare the Filling:
    • Heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft and translucent. Add spinach and cook until wilted. Remove from heat and let cool slightly.
    • In a large bowl, whisk together eggs, heavy cream, nutmeg, salt, and pepper.
    • Stir in the spinach mixture and feta cheese.
  4. Assemble and Bake:
    • Pour the filling into the prepared pie crust. Smooth the top with a spatula.
    • Bake in the preheated oven for 35-45 minutes, or until the quiche is set and the crust is golden brown.
    • Garnish with red pepper flakes if desired.

    • Let the quiche cool for several minutes before cutting into slices.
