Skillet Cornbread

 

Ingredients:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup whole milk
  • 2 tablespoons vegetable oil

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Place a 9- or 10-inch cast-iron skillet in the oven to heat while you prepare the batter.
  2. Prepare the Batter:
    • In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
    • In a separate bowl, whisk together the buttermilk, eggs, melted butter, and whole milk until well combined.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  3. Heat the Skillet:
    • Carefully remove the hot skillet from the oven. Add the vegetable oil to the skillet and swirl to coat the bottom and sides.
  4. Bake the Cornbread:
    • Pour the batter into the hot skillet, spreading it evenly. The batter should sizzle when it hits the hot skillet.
    • Return the skillet to the oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  5. Serve:
    • Allow the cornbread to cool in the skillet for a few minutes before slicing and serving. Serve warm with butter, honey, or your favorite topping.
