Grandma’s Cheesy Potato Chips

Grandma’s Cheesy Potato Chips are a healthy, delicious, filling breakfast, filling meal or simple dinner. Topped with cheese and finished with a perfect finish, these sweet potato wedges are sure to become a family favorite. Here’s an old-fashioned homemade recipe:
Grandma’s Cheese Potato Pancakes

Ingredients:
• 2 cups raw mashed potatoes (about 2-3 medium potatoes)
• 1/2 onion, finely grated or diced
• 1/2 water cup grated cheddar cheese
• 2 large eggs, beaten
• 1/4 cup flour
• 1/2 teaspoon salt
• 1/4 teaspoon black cumin
• 1/4 teaspoon garlic (optional)
• Frying oil (vegetable oil, canola or olive oil works)

Instructions:

1. Prepare the potatoes:
• Peel and mash the potatoes. Immediately place in a bowl of cold water to prevent burning.
• Drain the potatoes and squeeze out as much moisture as possible with a clean tea towel or cheesecloth. This step is important for simple pancakes.
2. Mix ingredients:
• In a large bowl, combine mashed potatoes, fried onions, grated cheddar cheese, beaten eggs, flour, salt, black pepper and garlic powder. Mix until everything is well combined.
3. Heat the oil:
• Heat about 1/4 of the oil in a large skillet over medium heat. The dough is ready in a short time and the dough will thicken when you get it.
4. Cook the pancakes:
• For each pancake, spoon about 1/4 cup of the potato mixture into the hot oil. Flatten slightly with the back of a spoon to make crepes.
• Cook for 3-4 minutes per side or until golden and lightly browned. Adjust heat as needed to prevent burning.
5. Remove and serve:
• Remove the pancakes from the pan and cover them with kitchen paper to remove excess oil.
• Serve hot with cream, applesauce or your favorite sauce.
Cooking Tips:
• Remove Moisture: The key to tender potatoes is to remove as much moisture as possible from the potatoes. Take time to drain the water.
• Constant temperature: Maintain a constant temperature for cooking pancreas. If the oil is too hot, it will burn on the outside before the inside is cooked; If it is too low, the pancake will be greasy.
